60 seconds to reveal the full aroma of your SENSA matcha.
Step 1 - Sift
Sift 1 gram of matcha (half a chashaku scoop) into a wide bowl using a small sieve. Sifting removes lumps and releases the aromas. This is the step most neglected by beginners, and the one that makes all the difference.
Step 2 - Pour
Add 70 ml of filtered water between 75 and 80°C. Definitely do not use boiling water: it burns the leaves and releases bitterness. No thermometer? Boil the water and then wait 2 minutes.
Step 3 - Whisk
Using a chasen (bamboo whisk), whisk in a W motion for 15 to 20 seconds. Not in a circle, in a W. A fine foam will form on the surface: this is the hallmark of a well-prepared matcha. Enjoy immediately.
